Sugo
There is one week in summer that is marked tomato red in our calendar every year – because that’s when we cook sugo together. It’s no different here than in any other Cilentan household. After all, tomatoes are at their most aromatic in summer. And who wants to miss out on the wonderful aroma of freshly harvested tomatoes in winter?
Sugo, a simple, creamy and aromatic tomato-based sauce, is an integral part of countless Italian dishes. And pasta with homemade sugo is real soul food. You can find out how to make it using our favorite recipe summer after summer on À Cràpa Mangia.
PROCESS
Sugo cooking takes place every summer in calendar week 32. Your stay with us lasts 5 days, and for one day it’s time to put on your apron and get to work on the tomatoes!
We prepare the bottles together, wash, cook and strain the tomatoes. Basil and a little fairy dust do the rest. Bottled, well corked and then boiled down, the sugo is ready for the journey home. And then you are certainly ready for a snack. How about some delicious panini and the best local buffalo mozzarella? We spend the well-deserved break together with Gerardina and Costabile – the latest gossip and lots of good tips about food and the area are guaranteed. A guided lunch at the Barlotti buffalo farm is also planned for the rest of your stay.
Otherwise, you’ll have plenty of time to explore the Cilento to your heart’s content. Or simply put your feet up and really switch off. The main thing is that you don’t forget your home-made sugo at the end!
